Texture:

Develops from almost sliceable (younger) to very crumbly, grainy, and crystalline (mature).

• Crystals: Tyrosine crystals form during aging, providing a satisfying crunch.
• Color: Pale golden. 

• Notes: Milk, butter, fresh fruit (banana, pineapple), nuts, beef stock, spices, and sometimes tobacco or cocoa in very aged versions.
• Taste: A balance of savory and sweet, becoming more complex and intense with age.
